Black Bean Hummus


We eat a lot of hummus around this house so I wanted to start expanding our hummus recipes beyond the usual chickpea based recipes. Cilantro, cumin, and lime add bold flavors to this black bean hummus, and make it a nice alternative to the traditional version. Serve it with whole wheat pita chips, lentil chips, or use it on your next sandwich or wrap!

What you'll need:

2 cans reduced sodium black beans, drained and rinsed
Juice of one lime
1/4 cup fresh cilantro
1 garlic clove
1/4 cup water
1 tsp. EVOO
1 tsp. cumin
1 tsp. kosher salt
1/4 tsp chili powder


Using a food processor, pulse the garlic and cilantro together until finely diced. Next, add the rinsed black beans, lime juice, EVOO, water, cumin, salt, and chili powder to the food processor. Turn your food processor on and blend until smooth. If the hummus is too thick, continue to add water 1 tbsp. at a time until you reach the desired smoothness.
