Coconut Salsa Crockpot Chicken
This meal certainly meets the criteria for a "Simply Clean Food" meal. All you need is six simple ingredients added to your crockpot, and you're set for dinner that night! There is so much flavor packed into such an easy meal.
What you'll need:
1 1/2 to 2lbs of chicken breast, thawed
1 jar salsa (mild, medium, or hot depending on preference)
1 can organic coconut milk
2 tbsp. red curry paste
1 tbsp lime juice (half of a lime)
1 tsp kosher salt
Optional: 6-8 thai basil leaves stirred in right before serving
Mix together salsa, coconut milk, red curry paste, lime juice, and salt in your crockpot. Add chicken breasts to crockpot making sure chicken is covered by salsa/coconut milk mixture. Turn crockpot on high for 3-4 hours.
Optional: Before serving, stir in thai basil leaves a let them wilt for about a minute.
Serve on top of cauliflower rice or if you're "team white rice" serve over white basmati rice.
