Mango Broccoli Slaw
I LOVE this mayo-free broccoli slaw recipe. Coconut milk replaces the mayonnaise traditionally used in most cole slaw recipes. Sweet, tangy, with a little added spice!
What you'll need:
1 package broccoli slaw (could substitute tricolor cabbage slaw)
1 small ripe mango, thinly sliced
1/2 small red onion, thinly sliced
1/4 cup cilantro, chopped
1/2 cup coconut milk
1 tbsp apple cider vinegar
1 tbsp lime juice
1 tbsp honey
1 tsp kosher salt
1/4 tsp cayenne pepper (optional)
In a large mixing bowl, whisk together the coconut milk, vinegar, lime juice, honey, salt, and cayenne pepper. Add in the bag of slaw, red onion, and cilantro. Stir until well combined. Gently fold in the mango slices. Let slaw mixture sit for about 10 minutes, stirring occasionally, letting the slaw absorb some moisture.
Serve on top of your fish tacos or as a great summer side dish!
