Sinful Chocolate Almond Butter Cookies
These cookies are soft, chewy, and taste like you're biting into a Reese's peanut butter cup (except they're gluten free, dairy free, and low in sugar). What a great way to get your candy fix without all the guilt!
What you'll need:
1 cup almond butter (you could also use peanut butter)
1/4 c. honey
1/4 c. organic coconut palm sugar
1/4 cup cocoa powder
1 tsp. baking soda
1 large egg
1 tsp vanilla extract
3/4 cup chocolate chips ( I used Enjoy Life choc chips which are dairy free)
Preheat your oven to 350 degrees. Line two cookie sheets with foil and cooking spray or parchment paper.
Begin by beating the egg in a large mixing bowl. Next, beat in the almond butter, honey, stevia, vanilla, cocoa powder, and baking soda. Finally, fold in the chocolate chips. Your dough will be thick. Using a tablespoon, scoop your cookie dough onto your lined cookie sheet (about 12/sheet). Gently press down on the tops of the cookie dough balls so they are slightly flattened. The back of a spoon would work well for this. Bake for 8-10 minutes. Allow the cookies to cool for about 10 minutes.
