Sweet Potato, Bacon, and Turkey Meatballs with Sriracha Cranberry Sauce
If you could combine all your favorite holiday flavors into one bite, I like to think this is EXACTLY what you would want! Sweet potatoes, bacon, and turkey in combination with the sage and thyme tastes just like a traditional Thanksgiving dinner. Add in the cranberry sauce (with a kick!), and you've got yourself quite the perfect holiday meatball. These would be a great holiday party food in bite size form!
What you'll need:
Meatballs
1 lb ground turkey
2 cups sweet potatoes, baked and mashed
1/2 cup onion, finely diced
1 garlic clove, minced
2 slices bacon, cooked
1/2 cup almond flour
1 tsp sea salt
1 whole egg
1 tsp rubbed sage
1/2 tsp ground thyme
1/2 tsp black pepper
Sriracha Cranberry Sauce
1 cup cranberries
1/4 cup raw honey
1/3 cup warm water
1/4 apple cider vinegar
1 tsp sriracha (or more!)
1/2 tsp sea salt
Preheat your oven to 400F degrees. Line a baking sheet with parchment paper or foil.
Begin by baking your sweet potatoes. If you have time you can put your sweet potatoes in the oven to bake. I never have time. I LOVE to cook my sweet potatoes in the microwave. They always turn out so well! Just poke the sweet potatoes with a fork all over. Place them on a microwave safe dish, and cook on high for 5 minutes. Check the sweet potatoes for doneness by sticking them with a fork to see if they are tender. If the potatoes need more time, put them back in the microwave for 2 minute increments checking on them until done. Allow to cool then remove the skins, and mash the sweet potatoes with the back of a fork.
Cook bacon slices until just cooked. Make sure not to over cook them as they will be baked in the oven as well. Once cooked, diced the bacon into very small pieces.
Meanwhile mix together the ground turkey, egg, almond flour, onion, garlic, sage, thyme, salt, & pepper. Once potatoes have cooled enough, mix in your mashed sweet potatoes and bacon pieces.
Roll meatballs into 2-3 inch balls. Place them on your lined baking sheet about 2 inches apart. Bake meatballs for 25-30 minutes or until internal temperature reaches 165 degrees.
While meatballs are baking, begin to make your sriracha cranberry sauce. Place warm water, honey, apple cider vinegar, sriracha, and salt in a saucepan. Stir until honey has dissolved into the water. Place your cranberries into the saucepan, and bring mixture to a slow boil on high heat. Once boiling, cover saucepan with a lid, and place heat on low. Cook for 10 minutes allowing cranberries to pop and become tender. Serve sauce warm with the turkey meatballs.
