Apple Spice Muffins


I love to keep these tasty muffins in my freezer for a quick breakfast, snack, or even dessert for the boys. Spread some almond butter on these muffins or even top with some coconut whipped cream for an amazing dessert! You can find my coconut whipped cream recipe here!

What you'll need:

1 cup gluten free rolled oats
3/4 cup almond flour
1/4 coconut flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp. nutmeg
1/2 cup almond milk
2 eggs
1/2 cup unsweetened applesauce
1/4 maple syrup
1 tbsp apple cider vinegar
1 tsp. vanilla extract

Preheat oven to 375 degrees.

Spray muffin tin with nonstick cooking spray.

Mix together the oats, almond flour, coconut flour, baking soda, salt, cinnamon, and nutmeg.  In a separate large mixing bowl, whisk your eggs together. Next, whisk in applesauce, maple syrup, and vanilla extract. Finally, add in your almond milk and apple cider vinegar. Add your dry ingredients to your wet ingredients bowl, and stir with a spatula until combined.

Using a 1/4 measuring cup, fill muffin tins with batter. You should get about 12 muffins. Sprinkle the tops of the muffins with a little turbinado sugar (optional). Place muffin tin in the oven for 15-17 minutes. Remove from oven and let cool for 10 minutes. 


Eat by itself or with a little almond butter for a great breakfast or afternoon snack!
