A Spin on Mac'n'Cheese
I couldn't let my little guys grow up in a world without mac'n'cheese. However, Cooper's gluten and dairy allergy sure has made this task challenging! I'm sure this version of "mac'n'cheese" is not for everyone, but for those of us on a restrive diet it doesn't get much better than this! It is creamy, "cheesy", and makes the boys happy!
What you'll need:
1 large rip avocado
1 tbsp. nutritional yeast
1/2 cup almond milk
1 tsp. kosher salt
1 tsp. garlic powder
2 tbsp. ghee or grass-fed butter
One package of pasta of choice
Never heard of nutritional yeast? Nutritional yeast is a deactivated yeast with added vitamin B12. It is an ideal vegetarian support formula and has an appealing cheese flavor. It can be sprinkled over popcorn or salads, added to juice, cereal, smoothies, gravies, soups or casseroles, or used to make sandwich spreads. It is sold at most grocery stores so you shouldn't have any issues finding it.
Begin by boiling your pasta of choice. Of course, we used a gluten free brown rice pasta.
To make the "cheese sauce", begin my mashing your avocado until completely smooth and creamy. You can do this using just a fork or you can use a food processor. It may help to add a little of your almond milk during this process. Once smooth, add your avocado, the rest of your almond milk, salt, nutritional yeast, and garlic powder to a small saucepan. Heat on medium low, stirring frequently, until heated through and smooth.
Drain your cooked pasta and return to pot. Add 2 tbsp of ghee or grass-fed butter to your pasta. Stir until melted and evenly distributed. Next, add your "cheese" sauce to the pasta pot and stir until thoroughly combined.
