Asian Tricolor Slaw
The dressing for this slaw is one of my favorites. A perfect combination of my favorite oriental flavors with a just a little heat. I love the addition of the almond butter. Some of my favorite asian dishes, like Pad Thai, use peanuts so I incorporated the almond butter to give the dish a nice nutty layer of flavor. Serve this slaw alongside your protein of choice for a refreshing asian inspired meal.
What you'll need:
Slaw:
1 (16oz) bag of tricolor blend slaw (blend of green cabbage, carrots, and red cabbage)
2-3 carrots, peeled and julienne cut or shredded
1/3 cup red onion, thinly sliced
1/4 cup cilantro, diced
Slaw Dressing:
1/2 cup coconut milk
2 tbsp apple cider vinegar
2 tbsp lime juice
1 tbsp raw honey
1 tbsp almond butter
1 tbsp red curry paste
1 tbsp siracha
1 tsp kosher salt
In a large mixing bowl, whisk together all of the slaw dressing ingredients until smooth. Next, add in your tricolor slaw, carrots, red onion, and cilantro. Stir until thoroughly combined. Allow to sit, stirring occasionally, for about 10 minutes.
