Raw Cookie Dough Bites


After trying my No-Bake Raw Brownie Bites, my husband requested that I create a recipe for cookie dough bites. Like many of us, there is nothing he loves more than "cleaning up" the bowl of cookie dough after I make a batch of cookies. We both loved the way these raw cookie dough bites turned out. It tastes EXACTLY like cookie dough using nothing but raw ingredients.

What you'll need:
1/2 cup raw almonds
1/2 cup raw walnuts
1/2 cup pitted whole dates
1/4 cup almond flour
1 tsp pure vanilla extract
1/4 tsp sea salt
1-2 tbsp almond milk
1/3 cup dark chocolate morsels 
(Enjoy Life Dark Chocolate Morsels are my favorite. Allergen free chocolate is the way to go!)

In a large food processor, grind the walnuts, almonds, and salt until they create a fine meal. Add in the dates, almond flour, and vanilla extract. Process again. While food processor is running, add in 1 tbsp of almond milk at a time (or more if needed) until sticky dough forms. Next, stir in your chocolate morsels. Roll a heaping tablespoon full of cookie dough into your hands to form a ball.  Once rolled, these cookie dough bites are ready to serve. You can keep them in an airtight container for up to a week.
